Gardenia Blue, with the CAS number 106441-42-3, is a natural food colorant derived from the fruits of the Gardenia jasminoides plant. This plant is native to laurel forests in regions such as China, Japan, Taiwan, and Vietnam. The colorant is valued for its natural blue hue, which is relatively rare in the world of food colorings.

The primary component of Gardenia Blue is genipin, a water-soluble irridoid monoterpenoid with a maximum absorbance at 496 nm that does not change with the pH of the environment. The blue color is produced when geniposide, found in the Gardenia jasminoides fruit, is hydrolyzed by β-glucosidase into genipin, which then reacts with amino acids like glycine, lysine, or phenylalanine .

Gardenia Blue has been used as a food colorant in East Asia for nearly 30 years. It is known for its resistance to changes in environmental pH and its relatively high resistance to light radiation. However, it is not heat-stable above 80°C, which limits its application in thermal processing of foods. Despite this, it is suitable for coloring liquid products like beverages, as well as solid products such as jellies and candies, although it may cause a color shift to blue-green in some cases .

In terms of safety, Gardenia Blue and its precursor genipin have been tested for genotoxicity, and neither has been found to induce micronuclei in peripheral blood cells or cause DNA damage in liver, duodenum, or stomach tissues in mice. This suggests that they could be safely used as a natural alternative to synthetic food colorants .

The colorant is also associated with various health benefits due to the properties of genipin. It has been found to possess antioxidant, anti-inflammatory, and antimicrobial properties. Moreover, genipin has been linked to anticancer, antidiabetic, neuroprotective, and antithrombotic effects, making Gardenia Blue not only a natural colorant but also a potential source of health-promoting compounds
