Pyruvic Acid is produced in the body during glycolysis, the initial step of glucose metabolism. It can be converted intoacetyl-CoA and enter the Krebs cycle for further oxidation to produce energy, or it can be converted to lactic acid during anaerobic conditions .

This compound is also used in the synthesis of various chemicals, pharmaceuticals, and as a food additive. Industrially, it can be produced through several methods, including the dehydration of tartaric acid with potassium hydrogen sulfate at high temperatures, or through the oxidation of lactate or other precursors .
