L-Arabinose (CAS number: 87-72-9) is a naturally occurring five carbon sugar, also known as L-arabinose or L-arabinose, which is an isomer of galactose and xylose. It is a white odorless powder used as a food additive in the food industry, mainly as a flavor enhancer, flavoring agent, or auxiliary agent
The application of L-Arabinose in the food industry includes as a substitute for sugar or as a substitute for sweeteners in baked goods and beverages. It can be used in various foods, such as baking mixes, beverages, cereal products, candies, dairy products, desserts, fruits and water ice, spreads, snack foods, as well as sweet sauces and syrups. The amount of L-Arabinose added is usually between 0.1% and 10%
In addition, L-Arabinose also has certain health benefits. Research has shown that L-Arabinose can lower blood sugar and insulin response by inhibiting sucrase activity in the intestine, thereby slowing down glucose absorption. This effect is significant in liquid foods containing simple sugars, but in more complex foods such as those containing fat and starch, its effectiveness may be affected to some extent
Nevertheless, L-Arabinose is still considered as a functional component that can help improve postprandial blood glucose and insulin response, especially for people who need to control blood glucose, such as diabetes patients or individuals at risk of diabetes
In terms of safety, L-Arabinose is considered safe and usually does not cause side effects when consumed in moderation. However, further research and evaluation are still recommended for specific populations or conditions of use.
