Sodium Inosinate, with the CAS number 4691-65-0, is a white crystalline compound that is odorless and has a characteristic umami taste, reminiscent of seafood. It is a disodium salt of inosinic acid and is used primarily as a flavor enhancer in the food industry1.

Chemically, sodium inosinate is stable under various conditions, including heat and alkaline environments. It begins to lose its crystalline water at around 40°C and becomes anhydrous above 120°C. The compound does not have a sharp melting point and browns at 180°C, decomposing at approximately 230°C. It is soluble in water, with a solubility rate of over 50 g/L, and is slightly soluble in ethanol and practically insoluble in ether1.

Sodium inosinate is produced industrially by fermenting sugar solutions with specific microorganisms that produce inosine, which is then phosphorylated to form inosinic acid. The acid is subsequently neutralized with sodium hydroxide to create the sodium salt1.

In the food industry, sodium inosinate is used as a flavor enhancer, often in combination with other enhancers like monosodium glutamate (MSG) and disodium guanylate. When used in conjunction with these compounds, it can significantly boost the savory taste of foods. It is commonly added to savory snacks, soups, sauces, and seasonings to enhance their natural flavors1.

In addition to its use as a flavor enhancer, sodium inosinate is also used in the medical field for the treatment of certain conditions, such as leukopenia and thrombocytopenia, as well as various acute and chronic liver diseases
