Sucralose is a non-nutritive, zero-calorie artificial sweetener that is approximately 600 times sweeter than sucrose. It is a chlorinated sugar substitute produced from sucrose when three chlorine atoms replace three hydroxyl groups. Sucralose is marketed under the brand name Splenda® and has the chemical formula C12H19O8Cl3 (MW 397.35). It is a white, odorless crystalline powder that is readily dispersible and soluble in water, methanol, and ethanol.
Sucralose is known for its high stability across a broad range of pH levels, in aqueous solutions, and during thermal processing. It does not interact with food ingredients and remains stable in dry form for extended periods. Due to its heat stability, sucralose is suitable for use in pasteurized, aseptic processing, sterilized, cooked, and baked foods. It is also poorly absorbed by the human body and is generally excreted unchanged in urine or feces, providing no calories.
Sucralose is used in a variety of food and beverage applications, including tabletop sweeteners, frozen drinks (excluding edible ice), canned fruits, pickled vegetables, cereal cans, bakery products, juice drinks, compound condiments, compound wine, sauce and sauce products, vinegar, soy sauce, modified milk, flavored fermented milk, edible fungi and algae, spices, jam and jelly, fermented wine, modified milk powder and modified cream powder, mayonnaise, salad, preserves, and candy. It is also used in pharmaceuticals, such as chewables, drops & lozenges, unpalatable ethical drugs, veterinary drugs, liquid preparations, pediatric liquids, re-constitutable powders, cough & cold syrups, and aerosol delivery systems. In personal care products, sucralose can be found in mouthwashes, oral rinses, lipsticks & lip balms, dentifrices, tooth powders, and other oral care products
